2017’s Happy Death Day was a darkly comedic and inventive slasher, with sorority girl Tree (Jessica Rothe) getting brutally murdered on her birthday only to wake that same morning to live it all over again. After a great murder montage and some smart detective work she manages to break the loop, but now Happy Death Day 2U, directed again by Christopher Landon, is back to continue the loopy, slashy fun. The Nightmare on Filmstreet review calls it a “creative ball of chaos“, and a worthy sequel to this fresh take on slasher films.

Perfectly on par with the quirky tone of the movies is the school’s ridiculous mascot; this college is home of the babies. I suppose there’s some deep symbolism of rebirth in that choice, but mostly it’s just hilarious. The Babyface Killer, with a mask probably lifted from the campus bookstore, is a lightly campy twist on the masked killer trope.

It’s also the inspiration for these Happy Birthday cupcakes. Of course a Happy Death Day movie requires cupcakes, but these are made with baby food, right in the baby food jars! I split the batter and made half with plums and half with carrots, but you use any mushy sweet flavor from the grocery store’s baby aisle. For the frosting, I made two buttercreams, one with mashed avocado and one with mashed banana (and got serious flashbacks to mashing up food for my kids when they were babies). Sprinkles and a candle are the finishing touch.

These aren’t just for horror freaks, they’d also be perfect for a baby shower.

Baby Food Cupcakes

For the cupcakes
3 eggs
2 cups sugar
1 1/2 cups vegetable oil
1 tsp vanilla
4 4oz jars baby food (I used carrot and plum)
2 cups flour, divided
2 tsp baking soda, divided
1 tsp salt, divided
cooking spray

Preheat oven to 350. Beat together eggs, sugar, vegetable oil and vanilla. Divide the batter equally between two bowls and stir in 2 4oz jars of baby food into each. Sprinkle 1 cup flour, 2 teaspoons baking soda, and 1 teaspoon salt over each, and stir until just combined. Prepare 24 baby food jars with cooking spray and fill with batter 2/3 of the way. (You can also make these as regular cupcakes, I did one batch in jars and one batch as cupcakes with liners). Bake for 22-25 minutes or until a toothpick inserted into the cupcake comes out clean. Cool completely.

For the avocado butter cream
1/2 a large avocado
1 tsp lemon juice
1 3/4 – 2 cups powdered sugar

 

Beat together avocado and lemon juice until smooth. Add in powdered sugar until you reach desired consistency.

For the banana butter cream
1/4 cup mashed banana
1 teaspoon lemon juice
1 1/2 tablespoons butter, softened
1 3/4 – 2 cups powdered sugar

Beat together banana, lemon juice, and butter until smooth. Add in powdered sugar until you reach desired consistency.

Top cupcakes with buttercream and sprinkles!
